Turkey Roasting Tips
From Associate's Gourmet Market

Remove the giblets from the cavity of the turkey and rinse well with cold water. Season your turkey and let rest at room temperature. I like to season my turkey starting with melting some butter w/salt, pepper, garlic, rosemary, sage and oregano. Do this earlier or the day before so the butter cools and firms up again and you can use it for other food also. Rub the turkey with the seasoned butter and lay your  over a bed of vegetables, (celery, carrots, and onions and season them as well). Roast in a 325 degree oven using the timetable as a guide basting evey hour. Turkey is cooked when the thigh temperature reads 170 degrees, or the breast reads 160 degrees. The juices must run clear when pierced with a fork or meat thermometer.  If the turkey is stuffed, the stuffing should read 160 degrees.
