Prime Beef

Ground Beef 9.99lb. I like to put our ground beef first because as a butcher it was the first thing I was taught. Great chopped meat makes a great butcher shop. It is always fresh and is delicious. We use a mixture that we cut by hand from necks of beef. short rib, top round and sirloin for flavor. We never use tube meat which most places use these days so it can keep there cost down. Tube meat also can carry the bacteria called ecoli.

Filet Mignon or Chateubrand $24.99lb. Filet is the most tender steak and as a roast its the easiest to cook. As a steak at 1-11/2 inch. steak on a hot grill only should take 3-4 minutes per side for med to med rare. As a roast which then is called a Chateubriand takes less than an hour to roast.Season your roast and leave out of refridgeration for about 1 hour in its roating pan for accurate cooking. Preheat your oven at 450 degrees for 15 minutes. Roast your filet for 40 minutes and 450. Your internal temperature should be at 105 degrees at this time. Let rest under foil for 10 minutes away from heat as it will keep cooking. This will be Medium rare. enjoy

Porterhouse Steaks $17.99lb.  This is a great steak to serve family style. Cut about 2 inches thick this steak should take about 20-24 minutes starting on a 425 degree grill for 3 minutes per side to seal in the juices, then lower your heat and turn every 5 minutes until done.

T-Bone or Shell Steaks $14.99lb.These steaks are off the Loin of beef which the Porterouse comes from. It starts as a Porterhouse turning into a t-bone and then a shell steak. A shell steak is also called a NY Strip or a Kansas City Steak. These steaks cut at an average inch. on a medium high grill should take 3-5 minutes per side .

Sirloin Steaks $12.99lb. Sirloin are known for great flavor and tenderness. Great for a gathering and can be sliced or eaten as a steak. Our average Sirloin is usually an 11/4 inches thick and should take 12-15 minutes to cook on a medium high grill turning every 3 minutes or so. Let rest for 5-7 minutes before serving.

Prime Rib $18.99lb. This is the most juiciest roast or Steak you can buy. As a roast it is ordered by the rib, 1 rib feeds 2 guests. A Rib Roast takes 20 minutes per pound up to 8 pounds, 8 pounds or more you have to drop your minutes to 15-18 minutes per pound at a 350 degree temperature. Use your meat thermometer for accurate doneness. As a steak also known as a rib eye or a club steak you will love it. Cook it the same as a shell or t-bone.

Baby Club Steaks $7.99lb. These are great little steaks similar to Prime Rib Steaks. There are 2-3 steaks left on the neck of beef where the rib meets the neck. They are inexpensive and delicious.

Top Round London Broil $10.99lb. Great for a group of people, best cooked med to med rare and sliced thin across the grain. it goes around further and is less expensive as the other steaks but is very good when cooked and sliced correctly.

Flank Steak $11.99lb.This is the origional London Broil but is thinner. 4-5 minutes per side on a medium high grill for a medium rare is nice for a Flank. You can also use this for stir fry or Braciola.

Flank Steak Pinwheels $10.99lb.A flank steak butterflied open and stuffed w/romano cheese, parsley, mozzarella cheese, salt,pepper and garlic. The best way to make these are in a pan on top of your stove. On a medium high preheated pan w/olive oil sautee steak 5 minutes per side to seal some of the cheese in, then lower heat and simmer covered for  5 - 8 minutes in your favorite marinade or marinara sauce and serve over rice of pasta.

Skirt Steak $19.99lb. Also Known as Rumanian Steak. Lots of flavor and cooks very quick.

Skirt Steak Pinwheels $19.99lb. Skirt steak butterflied, pounded thin, rolled and sliced into little steaks then marinated in our homemade steak marinade. These are great for the grill and only takes 3-5 minutes per side.
